Cooking Out - Kauai Style
Gather with friends for a barbecue and test your culinary skills by seasoning your meal with fresh herbs from the Poipu Kapili herb garden. Guests have been known to share favorite recipes while chatting around the barbecues. You will find two charcoal barbecues beside the swimming pool, and two gas grills by the tennis courts. During the winter months, migrating whales often provide exciting entertainment if you are barbecuing on the poolside grills
Grilled Hawaiian Style Mahi Mahi
Ingredients:
6 Mahi mahi filets, (7-8 oz. each) 1/2" thick
softened butter
2 cups mango chutney
3 ounces white wine
2 ounces cider vinegar
3 ounces brown sugar
1 ounce sherry
1 teaspoon white pepper
3 ounces Lilikoi juice (passion fruit)
2 ounces pineapple juice
3 tablespoons chopped macadamia nuts
2 tablespoons minced parsley
Directions: First prepare the Mango Chutney Sauce: In blender or food processor, blend mango chutney until smooth and creamy. Transfer to a saucepan with the remaining ingredients and simmer, stirring occasionally, for about 10 minutes over low to moderate heat. Brush both sides of fish with softened butter. Broil one side until half done. Carefully turn fish over and broil other side. To serve, portion fish filets on warm plates or serving platter. Spoon 1-2 tablespoons of sauce over each filet and sprinkle with chopped macadamia nuts and chopped parsley
